Beef Spinach Salad

It was a warm, humid day and the guys were tired of pasta, but needed a filling, but not too heavy cold dish. This is good with crackers or dinner rolls or just standing alone. Toss in some cooked mini-seashells and it makes a nice summer pasta salad. Read more I have used dried basil instead of fresh, although the fresh is nicer. See less
Ingredients
- One bag of raw, pre washed spinach, torn into smaller pieces if needed. shopping list
- About one pound leftover sliced roast beef, cut into pieces. shopping list
- Six hard boiled eggs, sliced lengthwise shopping list
- 1 cup grape tomatoes, halved shopping list
- 1 carrot, grated shopping list
- 1 green onion, diced shopping list
- Dressing: shopping list
- 3/4 cup sour cream shopping list
- 1/2 cup mayonaisse shopping list
- 1/4 tsp celery seed shopping list
- 1/4 cup diced fresh basil shopping list
- Dash of salt shopping list
- Dash of pepper shopping list
How to make it
- Mix spinach, eggs, beef, tomato halves, carrot and green onion in large bowl.
- Mix remaining ingredients and add when ready to serve.
