How to make it

  • Melt 1 tbsp butter in olive oil over medium high heat. Saute onion, mushroom and bacon. Add rice, stirring to coat with oil, about 2 minutes. When rice has taken on a pale, golden color pour half cup of cream soup or broth. Stirring constantly until liquid has reduced. Add remaining 1/2 cup cream soup to the rice stirring while it simmers to fully absorb liquid. Add 1 tbsp butter and continue adding broth 1/2 cup at a time until the broth is absorbed and rice is al dente. About 15-20 minutes. Sprinkle salt to taste and grated parmesan cheese, continue stirring until creamy consistency. Remove from heat and serve warm. See Photo
