How to make it

  • Soak beans overnight in water to more than cover.
  • Place whole onion and scored salt pork (or bacon) in bottom of a bean pot.
  • Cover with drained, soaked beans.
  • Mix molasses, brown sugar, dry mustard, pepper and salt with enough hot water to mix well. Add to beans.
  • Pour in enough hot water to cover beans.
  • Cover bean pot and bake in 400 degree oven until they begin to boil.
  • Lower oven to 325.
  • Check frequently and add water to cover top of beans, as needed.
  • Keep cover on for 3 hours.
  • Remove cover and bake 3 hours longer.
  • Remove onion and serve.
