How to make it

  • *Heat oven to 300 degrees and put bread slices in oven on wire rack for 6-8 minutes to dry out. While bread is drying out make batter.
  • * Heat 10- to 12-inch cast iron skillet over medium heat for 5 minutes. Meanwhile whisk all batter ingredients in bowl until smooth. Pour in pie pan. Soak bread without over-saturating, about 20-30 seconds per side Pickup bread and allow excess batter to drip off; add to hot skillet and/or repeat with remaining slices.
  • * Swirl 1-2 tablespoons butter in hot skillet. Transfer prepared bread to skillet 2-3 slices at a time and cook until golden brown, about 2-3 minutes on first side and 1- 2 minutes on the second. Put in warm oven or serve immediately with maple syrup and butter. Wipe out skillet with paper towel and continue to cook remaining bread, adding 1-2 tablespoons butter to skillet for each new batch. Yield: 6 to 8 slices.
