Greenbean Saute

- INGREDIENTS: shopping list
- 1 Lb Green beans shopping list
- 1/4 Lb bacon or pancetta shopping list
- Extra virgin olive oil shopping list
- 2 Garlic cloves minced shopping list
- 1/4 Cup White wine shopping list
- 1/4 Cup Lightly toasted sliced almonds shopping list
- 1/4 Cup Dried tart cherries shopping list
- 1 Tbsp unsalted butter shopping list
How to make it
- Put the cherries into a saucepan with water and bring to a boil. Then reduce to a simmer when the cherries about 10 minutes and shut off. Allow the cherries to sit in the water until you are ready to use them.
- Blanch the green beans in boiling water for about 3 minutes and then soak in a ice bath to stop the cooking process. Thoroughly dry the cool green beans.
- Heat a skillet and add the almond slices when you begin to smell the aroma of the almonds remove immediately and reserve for later.
- Add enough oil to lightly cover the bottom of the pan. Render the bacon and set aside until later. Saute the green beans and the cherries allow them to saute about 10 minutes until all are slightly tender.
- Add the garlic and mix well when you start to smell the aroma of the garlic add the wine. Allow the wine to cook off into the green beans.
- Crumble the bacon on top add the almonds and butter mix well taste and adjust with salt and pepper.
