How to make it

  • 1. Combine semolina, rice flour, maida and salt in a mixing bowl.
  • 2. Add 500 ml of water and mix well.
  • 3. Add ground pepper, chilies, cumin, asafoetida. Mix well and let it rest for 15 minutes.
  • 4. The batter will be thick. Add approximately 400ml water and mix well. It should be around the consistency of crepe batter, quite thin.
  • 5. Heat a pan, then pour the batter to barely cover the pan. Do not fill the small holes that form. Pour 2 tsp oil on the edges and in the middle.
  • 6. Let it cook for a minute or until brown. Flip. Leave for another minute. Remove from pan and serve hot.
