Oven Roasted Beef Lamb Veggies Casserole

- Meat and Marinade: shopping list
- 500 grams (250 beef flank steak and 250 lamb from shoulder cut 5 cm by 2 cm shopping list
- 100 ml greek yogurt shopping list
- 1 teaspoon of each of these ground spices: paprika, cumin, coriander, cardamom, black pepper, cinnamon, curry, brown sugar shopping list
- 1 heaping tablespoon mustard shopping list
- 2 tablespoons lemon juice shopping list
- 1 tablespoon olive oil shopping list
- 1 tablespoon salt shopping list
- 5 big cloves of minced garlic minced with one small green chili with seeds removed shopping list
- Vegetables: shopping list
- To be seasoned with black pepper, curry and salt and 2 tablespoons olive oil and one tablespoon white vinegar: shopping list
- 1 potato size of your palm unpeeled with 1 sweet potato same story cut into thin circles not thicker than 1 cm shopping list
- 6 garlic cloves peeled and divided into half shopping list
- 2 bell peppers one red and one green torn shopping list
- 1 mug of cherry tomatoes or one mug of red tomato cut into circles 1 cm thick skins left on shopping list
- 1 big onion cut into wings or thin circles shopping list
- 1/2 cup mushrooms shopping list
- a few leaves of rosemary shopping list
How to make it
- FIrst
- Heat your oven to 200 C up and down
- Second
- prepared the marinade by mixing all the ingredients for the marinade then drop the meat into it and put to sit aside while you chop the veggies.
- Third :
- Chop all your veggies, then take a wide casserole or you can line your baking shelf with a foil which is even better and paint with olive oil, then put your potatoes at the bottom topped with your onions then pour your meat mixture then top with the tomatoes then insert in between the mushrooms and sweet peppers.
- For the cooking:
- Put in the medium shelf of your oven and cook on lower thermostat only for 30 minutes. Then turn off lower thermostat and cook for another 15 to make it red with upper thermostat.
- Serving Suggestions:
- Best served with fresh greek yogurt if eaten with pita bread or just next to vermicelli rice.
- Note:
- if your oven is too hot you may need to open your oven and add 25 ml of water into your tray to avoid burning halfway cooking on the lower thermostat, once you are happy with the results you take out your casserole and throw out extra water and then turn off lower thermostat and turn on upper thermostat.
