Ingredients
  • FOR A 8-INCH PIE:
  • 2 egg whites
  • ½ teaspoon vanilla extract
  • ¼ teaspoon cream of tartar
  • 4 Tablespoons sugar
  • FOR A 9-INCH PIE:
  • 3 egg whites
  • ½ teaspoon vanilla extract
  • ¼ teaspoon cream of tartar
  • 6 Tablespoons sugar

Directions
  1. Beat egg whites with vanilla extract and cream of tartar till soft peaks form. (Whites will whip fluffier if they are at room temperature.) Gradually add sugar, beating till stiff and glossy and all sugar is dissolved.
  2. Spread meringue over filling (at room temperature), sealing meringue to edges of pastry all around. This prevents shrinking.
  3. Bake in moderate oven at 350° F for 12 to 15 minutes, or till peaks of meringue are golden brown.

I am emailing this to my daughter, this is my recipe, if I measure, but if I'm doing bakesale
fundraiser, I'll use 5 egg whites to make it impressive and yeah my pies go first.
