Reduced Calorie Eggplant Parmesan

- 1 eggplant, about one pound shopping list
- 4 tsps olive oil shopping list
- 80 grams/3oz Mozzarella cheese shopping list
- 50 grams/1.5oz grated parmesan cheese shopping list
- Salt and pepper shopping list
- 1 8x8 or 9x9 baking form shopping list
How to make it
- Preheat oven to 360F.
- 1. Cut the eggplant into 4 slices and season with salt and pepper.
- 2. Heat a large frying pan over medium high heat. Add 2 tsps of olive oil and brush the oil around the pan. Place the eggplant in the pan and fry until golden brown. Remove from pan and brush the remaining 2 tsps of oil in the pan. Return the eggplant to the pan and brown the other side. Each side will take about 4 minutes.
- 3. Line a baking pan with parchment paper. Add a little sauce to the pan and layer the eggplant and cheeses with a small sauce between the layers. Top with the remaining sauce and cheeses.
- 4. Bake for 30 minutes. Let sit for a few minutes before serving..
