Ingredients
  • CRUST:
  • 3 double graham crackers
  • 1 Tablespoon reduced-calorie margarine
  • FILLING:
  • 1 envelope unflavored gelatin
  • ½ cup skim milk
  • 1 (16-ounce) low-fat cottage cheese
  • ¼ cup granualted sugar
  • 2 Tablespoons freshly squeezed orange juice
  • 1 teaspoon finely grated orange peel
  • 1 (15½-ounce) can crushed pineapple packed in juice, drained
  • 2 Tablespoons low-calorie orange marmalade

Directions
  1. CRUST: Crush graham crackers with rolling pin (in large plastic bag). melt margarine, stir in crumbs until thoroughly mixed. Press over bottom of 8 x 3-inch spring form pan; freeze at least 10 minutes until ready to fill.
  2. FILLING: In small saucepan sprinkle gelatin over milk, let stand 5 minutes until softened. Place pan over low heat, heat 3 to 5 minutes, stirring constantly until gelatin is dissolved. Remove from heat, cool slightly. In blender process cottage cheese, sugar, orange juice, peel and gelatin mixture until blended and smooth; stir in half of pineapple. Pour cheese mixture over prepared crust; refrigerate at least 4 hours or overnight until firm.
  3. TO SERVE: In small bowl, stir marmalade into remaining pineapple; spoon carefully over top of cheesecake.
  4. Per serving: 142 calories, 2g fat, 9g protein, 25g carbohydrates.
