How to make it

  • Cut the top of the garlic head off to expose the cloves season with salt and pepper. Drizzle olive oil on the exposed cloves wrap with foil. Coat the peppers with olive put onto a baking tray with the garlic. Bake in a preheated oven 40 minutes at 400 degrees. You can remove the garlic after 40 minutes and set aside for later. When the peppers are chard remove you might want to turn the peppers over and allow the side down to char as well for a few more minutes.
  • Put the peppers in a bowl and cover it with saran wrap so the skins will come off easy. Remove the skins of the peppers and discard with the seeds. Slice the peppers into thin strips. Push the garlic out of the garlic skins and reserve with the peppers and the pepper juices for later.
  • With the point of a pairing knife poke a few holes into the sausages on both sides.In a large skillet with just a light coating of oil sear the sausage on a medium high flame you want the outsides to crisp a little but not to cook the inside completely through. While the sausage is searing if you add a little wine it will cause a great crispy coating. When the has been seared remove and save for later. Allow to cool.
  • In the same skillet with the residuals of the browned sausage saute your onions with salt and pepper when they begin to clarify de glaze the skillet with the white wine and continue to cook the onions until caramelized.
  • Cut the sausage into bite size discs and return the sausage to the skillet with the onions. Add the sliced roasted peppers with the juic as well as the garlic and cook until all the sausage is cooked through.
  • Top with a little butter add the basil and serve either on toasted Italian bread as a sandwich, or as a main dish.
  • FOOTNOTES:
  • I have tried this dish many different ways like just frying the peppers. But when you leave the skins on the peppers they separate into the meal not good. Tip make the roasted peppers and garlic a day or two in advance and refrigerate. Allowing them to sit in the peppers juices really bringe out the flavors. Just allow to come to room temperature before using.
