Chicken In Sweet Potato And Spinach Curry

- 2 oz coconut oil shopping list
- 2 lbs boneless chicken thighs cubed shopping list
- 1 diced yellow onion shopping list
- 1tsp salt shopping list
- 1/2tsp black pepper shopping list
- 4 cloves garlic minced shopping list
- 2TBS curry powder shopping list
- 2tsp turmeric shopping list
- 2 1inch pieces ginger, minced or grated shopping list
- 1 1/2 lbs sweet potatoes, cubed shopping list
- 1 can coconut milk shopping list
- 1 bunch cilantro, chopped shopping list
- 5oz spinach lightly chopped shopping list
How to make it
- Heat oil in large skillet. Add Chicken, onion, salt and pepper. Cook until browned, 5 to 6 min.
- Add garlic, curry powder, turmeric and ginger. Heat until fragrant.
- And sweet potato and coconut milk. Bring to boil, cover and lower heat and simmer until potatoes are softened. 12 to 15 min.
- Once the potatoes are softened and cilantro and spinach and continue to simmer until the spinach is wilted.
- Serve in a bowl alone or over rice.
