How to make it

  • Heat the oil in a wok over medium heat, add the leeks and cook for some 15 minutes or so or until beginning to soften and turn golden brown;
  • Add the wine, lemon juice and zest and season with salt and pepper - all to taste;
  • Continue to cook, stirring often,on a medium low heat, for a further 10 minutes or so or until tender;
  • Taste for seasoning and flavour and serve
