Spicy Roasted Tomato & White Bean Salad With Swiss Chard

- 1 large bunch of Swiss chard, ribs & stems removed, leaves torn into bite-sized pieces (Kale may be substituted) shopping list
- 2 cups grape or cherry tomatoes shopping list
- 2 large sprigs fresh oregano shopping list
- 2 garlic cloves thinly sliced shopping list
- 2 Tbsp olive oil shopping list
- 1 tsp salt shopping list
- 1 tsp ground black pepper shopping list
- 1/4 teaspoon red pepper flakes or any spicy pepper you like shopping list
- 1 15-oz can cannellini beans , drained & rinsed shopping list
How to make it
- Wash & chop Swiss chard or kale into bite-sized pieces. Place the chard or kale leaves, tomatoes, oregano & garlic slices in a large baking dish.
- Drizzle with olive oil and season with salt, spicy pepper & black pepper.
- Bake at 425 degrees for about 20 minutes, or until the tomatoes burst slightly.
- Add beans and bake for 5 more minutes to heat them through.
- Allow to cool to room temperature and serve.
