Pozole

- 1/3 c vegetable oil shopping list
- 1 onion, chopped shopping list
- 4 cloves garlic, minced shopping list
- 1/4-1/2 tsp hot red chili flakes shopping list
- 1 c flour shopping list
- salt and pepper to taste shopping list
- 1 lb pork loin, cut into 1/4-1/2 inch cubes shopping list
- 7 c chicken stock shopping list
- 1 (29 oz) can white hominy, drained and rinsed well shopping list
- 2 tomatoes, diced or 1 (16 oz) can diced tomatoes shopping list
- 1/4-1/2 c chopped cilantro (by taste) shopping list
- 1 lime, juiced shopping list
- 1 1/2 tsp oregano shopping list
How to make it
- Chop onion and cilantro. Mince garlic and set aside.
- In a large pot, heat two tablespoons of vegetable oil over medium heat. Add the onion and saute` until just tender. Add the minced garlic and red chili flakes. Saute` until fragrant. Transfer to a bowl and set aside.
- In a shallow dish, stir together the flour, salt, and pepper. Dredge the pork cubes in the flour mixture and shake off the excess. Add the remaining vegetable oil to the pot. Add the pork and brown on all sides. Return the onion mixture to the pot. Stir in the chicken stock, hominy, tomatoes, cilantro, lime juice, and oregano. Add salt and pepper to taste.(I usually don't need to add salt due to the salt content of the hominy.) Bring to a boil, then reduce heat to medium-low.
- Cover and simmer about an hour, or until pork and hominy are very tender. Ladle into bowls and serve with your favorite bread or crackers.
