How to make it

  • In a wok/skillet, large enough to accommodate the beans, on a high heat, add the water and green beans, slightly salt to taste, stir and bring to the boil;
  • Cook beans for some 2 to 3 minutes or so;
  • Drain, remove the beans and set aside;
  • Wipe the wok dry - use Kitchen towel - add the butter and melt on a medium heat;
  • Return the beans to the pan, season with salt - if needed - & pepper to taste and sauté, stirring well to coat them, for 2 to 3 minutes or so until beans cooked but still with some bite;
  • Remove from the heat, squeeze over the lemon juice to taste, mix through well and serve.
