Small Batch Crispy Oatcakes

- 2 packets of flavored instant oats (approx. 3/4 cups) shopping list
- 1/4 c. all purpose flour shopping list
- 1/8 c. whole wheat flour shopping list
- 1/8 t. baking soda shopping list
- 2 T. butter (or you can use shortening) shopping list
- 1 T. shortening (or you can use butter) shopping list
- 2 T. cold water shopping list
How to make it
- Preheat oven to 350 degrees (f).
- 1. Mix oats, flours, and baking soda together in a bowl.
- 2. Cut in butter and/or shortening working fat(s) into oat mix well by rubbing with your fingers.
- 3. Add cold water and mix well.
- 4. Turn out onto cutting board and press mix together rolling dough out to 1/4" thickness. If sides split press/push together.
- 5. Cut into pieces approximately 2" x 2.5" or there about.
- 6. Bake on parchment lined baking sheet until golden and firm about 25 minutes. Turn oven off and let cool with door partially open.
- 7. Cool completely. Eat and enjoy!
- *This is an ideal small batch size that can bake in a toaster oven.
- *There is no need to add sugar to the recipe when using flavored instant oats. Any flavor is delicious.
