Broccoli, Rice & Cheese Casserole

- 1 box Rice-a-Roni white and wild rice mix shopping list
- 1 fresh broccoli crown, chopped - 2 1/2 cups shopping list
- 1 small onion, chopped shopping list
- 2 cloves garlic shopping list
- 1 Tablespoon butter shopping list
- 1/2 cup coarsely chopped walnuts or pecans, toasted shopping list
- 4 oz. cheddar cheese - or you can use Velveeta shopping list
How to make it
- Melt butter in medium saucepan over medium high heat and saute onion and garlic about 2 minutes.
- Add rice mix and the seasoning pouch and 1 2/3 cups water. Bring to a boil.
- Lower heat to simmer, put a lid on the pan.
- Simmer about 20 minutes.
- Stir in broccoli. Cover.
- Simmer 10 more minutes.
- Stir in cheese until it melts.
- If you want to serve from a casserole dish, spread in 8 x 8 sprayed glass dish and top with the chopped nuts.
- If serving from stove top, you can just fold the nuts into the mixture.
