Lazy Eggplant Parm

- 1 Small Onion, sliced shopping list
- 4-5 Garlic cloves, sliced shopping list
- 2 Eggplants, sliced 1/4 inch shopping list
- Fresh basil, Oregano, Parsley to taste (substitute with dried) shopping list
- Tomato Paste shopping list
- 1/4 cup Dry Red Wine shopping list
- Spicy Marinara Sauce shopping list
- Italian Seasoning shopping list
- chili Flakes shopping list
- black pepper, freshly cracked shopping list
- 2 small balls of Mozzarella, sliced shopping list
- 1/2 cup Parmesan, shredded shopping list
- 1/4 cup Guyere, shredded shopping list
- 1/4 cup bread Crumbs shopping list
- Optional: Browned ground meat of your choice shopping list
How to make it
- Step 1: Preheat oven to 450F
- Step 2: Spray baking tray with oil. Place eggplant slices in a single layer and drench in olive oil and then season to taste. Place in oven and bake for 30 minutes.
- Step 3: Saute onion in oil and season. Once caramelized, add in garlic and tomato paste. Next add red wine. Add sauce and parsley (optional browned ground beef). Simmer.
- Step 4: Flip eggplant slices at 15 minute mark.
- Step 5: Add shredded guyere and oregano to bread crumbs. Toast in oil.
- Step 6: Remove eggplant slices from oven and assemble components.
- Step 9: Sauce, Eggplant, Parmesan, Basil, Oregano, Parsley, Bread Crumbs, Mozzarella, Repeat.
- Step 10: Broil on low.. Serve.
