How to make it

  • Step 1: Preheat oven to 450F
  • Step 2: Spray baking tray with oil. Place eggplant slices in a single layer and drench in olive oil and then season to taste. Place in oven and bake for 30 minutes.
  • Step 3: Saute onion in oil and season. Once caramelized, add in garlic and tomato paste. Next add red wine. Add sauce and parsley (optional browned ground beef). Simmer.
  • Step 4: Flip eggplant slices at 15 minute mark.
  • Step 5: Add shredded guyere and oregano to bread crumbs. Toast in oil.
  • Step 6: Remove eggplant slices from oven and assemble components.
  • Step 9: Sauce, Eggplant, Parmesan, Basil, Oregano, Parsley, Bread Crumbs, Mozzarella, Repeat.
  • Step 10: Broil on low.. Serve.
