Carrot Ribbon Salad

- 3-4 large heirloom carrots shopping list
- 3 cups baby arugula shopping list
- 1/4 cup raw pine nuts shopping list
- Dressing shopping list
- 1/3 cup olive oil shopping list
- 1/4 cup lemon juice shopping list
- 2 T fresh, finely chopped basil shopping list
- 2 T fresh, finely chopped chives shopping list
- 2 t whole grain Dijon mustard shopping list
- 2 t raw honey or coconut nectar shopping list
- Sea salt and ground pepper to taste shopping list
How to make it
- Use a peeler to make long carrot ribbons - you will want about 3 cups of carrots when you're done. In a large bowl, toss the carrots, arugula, and pine nuts together.
- For the Dressing
- Quickly pulse the ingredients in a mini blender or whisk in a bowl. Pour over the salad, mix well, and serve.
