Dilly Beet Soup

- SOUP BASE shopping list
- 2 1/2 cups (570 ml) water shopping list
- 1 cup (225 g) chopped beets shopping list
- 2 stalks of celery shopping list
- 1/4 of a medium avocado shopping list
- 3 tablespoons (45 ml) lemon juice shopping list
- 1 to 2 Medjool dates, pitted shopping list
- Few sprigs of dill shopping list
- 1 clove of garlic shopping list
- 1/2 teaspoon sea salt shopping list
- ADDITIONAL shopping list
- Avocado, cubed shopping list
- cashew Sour Cream shopping list
How to make it
- Process all the ingredients in a blender until smooth. Adjust seasonings to taste. Pour into serving bowls and top with cubed avocado and a dollop of Cashew Sour Cream.
