How to make it

  • Preheat oven to 440f/220c/fan 200c /gas 7.
  • Heat a frying pan over a medium heat, season the chicken and add to the pan, skin-side down;
  • Cook for some 5 minutes or so until the skin is golden, then turn over and cook for a further 5 minutes or so;
  • Meantime, while the chicken is cooking, mix together the garlic, most of the parsley, butter and remaining oil in a bowl, and season lightly;
  • Mix together the lemon zest and breadcrumbs in another bowl;
  • Place the chicken in a lightly buttered foil lined Baking tray/dish skin-side up and spoon over the garlic butter and sprinkle over with the breadcrumb and lemon zest;
  • Cook in oven for some 20 to 30 minutes or so until the chicken just cooked through and juices running clear;
  • Serve with the remaining parsley on top.
