Costa Del Sol Chicken Kiev Tray-bake

- 2tbsp Olive Oil shopping list
- 22½g/¾oz butter - melted shopping list
- 2 skin-on chicken breasts shopping list
- 3 cloves Garlic - crushed shopping list
- ½ to 1 Lemon - zest only shopping list
- 2tbsp Flat Leaf Parsley - chopped shopping list
- Quantity Dried Breadcrumbs shopping list
- Salt & freshly ground black pepper shopping list
How to make it
- Preheat oven to 440f/220c/fan 200c /gas 7.
- Heat a frying pan over a medium heat, season the chicken and add to the pan, skin-side down;
- Cook for some 5 minutes or so until the skin is golden, then turn over and cook for a further 5 minutes or so;
- Meantime, while the chicken is cooking, mix together the garlic, most of the parsley, butter and remaining oil in a bowl, and season lightly;
- Mix together the lemon zest and breadcrumbs in another bowl;
- Place the chicken in a lightly buttered foil lined Baking tray/dish skin-side up and spoon over the garlic butter and sprinkle over with the breadcrumb and lemon zest;
- Cook in oven for some 20 to 30 minutes or so until the chicken just cooked through and juices running clear;
- Serve with the remaining parsley on top.
