Stuffed Bell Peppers Recipe

- 8 large bell peppers , Green / Yellow / Orange / shopping list
- Red -has the sweetest taste and more vitamins shopping list
- 1 lb. ground beef / turkey / chicken / pork / venison / bison / shopping list
- rabbit / Veggie Crumbles / Whatever you like shopping list
- 1 lb. ground pork / turkey / chicken / beef / venison / bison / shopping list
- rabbit / Veggie Crumbles / Whatever you like shopping list
- 2 eggs shopping list
- 1 cup of cooked rice, again make it yours, white / brown / shopping list
- black / jasmine / any and all rice will work here, shopping list
- as will Quinoa shopping list
- 2 cloves fresh garlic, mashed, I use more - I admit it!!! shopping list
- 1 large onion, chopped shopping list
- salt shopping list
- pepper shopping list
- italian seasoning shopping list
- - shopping list
- 2 lg cans tomato sauce -or- spaghetti sauce, OR your own shopping list
- homemade, red or white shopping list
How to make it
- Grease bottom of a deep pan or cake pan with oil.
- OR - Just spray with Oil, I bought a oil spraying bottle
- and fill it with EVOO
- OR - use a silicone mat
- ~ ~ ~
- Cut tops off of green peppers and clean out the seeds
- so that you have 8 hollows.
- OR - Slice them down the center, into 2 halves,
- clean out the seeds.
- This will give you 16 halves, smaller serving, freezes well.
- Which ever of these ways works best for you.
- Set aside in the pan, bottom down.
- Mix meats, eggs, garlic, onion, and all seasonings in
- large bowl.
- Add rice / quinoa and mix together.
- Stuff peppers with meat mixture, placing them back into
- pan bottom down, when full.
- Place in pan and pour both cans of tomato sauce, or
- spaghetti sauce, over top of the meat and peppers.
- OR - Make your favorite Sauce Red or white and use it.
- Cook at 350 F for an hour.
- Serve with beefy / any flavored rice, mashed / baked
- potatoes, or beefy / creamy noodles.
- Maybe a nice salad!
- Something cool and light would really off set this pretty
- heavy main dish.

- **ERMA'S NOTE: About 10 minutes before I am ready to
- take these out of the oven I sprinkle with shredded
- cheese. If vegan you could use nutritional yeast.
- I have a negative reaction to it, so I can not use it.
- My Mom did not do this but we like it that way.
