How to make it

  • Rinse quinoa thoroughly. Add quinoa to saucepan with salt and water or broth. Bring to a boil, then cover and simmer for about 15 minutes.
  • Meanwhile combine the fresh lime juice, olive oil, salt and pepper. Shake it up well before using.
  • Thinly slice the red onion, chop up the tomatoes, and mince the hot peppers.
  • Mix cooked quinoa with the lime juice mixture. Then add in vegetables. Top with cilantro and lime slices. Salt and pepper to taste.
