Meatloaf With Vegetable Sauce

- 2 pounds lean ground beef shopping list
- 3/4 cup plain rolled oats shopping list
- 1 egg shopping list
- 1 pressed clove garlic shopping list
- 1 1/2 teaspoons salt shopping list
- 3/4 cup finely chopped onions shopping list
- 6 tablespoons finely chopped parsley shopping list
- 1 can (14 oz) tomatoes shopping list
- 2 tablespoons butter shopping list
- 1 medium-sized carrot, chopped shopping list
- 1 cup chopped celery shopping list
- 1/4 cup chopped green bell pepper shopping list
- 1 large can tomato sauce (15 oz) shopping list
How to make it
- Heat oven to 325.
- Combine beef, oats, egg, garlic, salt, 1/2 cup of the onion, and 4 tablespoons parsley. Drain liquid from tomato can INTO the meat mixture and mix well. Set tomatoes aside. Mix well.
- Mound meatloaf mixture into a loaf shape down the center of a shallow baking dish. (8 x 12 x 2, 13 x 9 x 2, whatever). Bake uncovered at 325 for 1 hour.
- While meatloaf is cooking, melt butter in frying pan over medium heat and sauté the remaining onion, carrot, celery, green pepper for about 10 minutes, being careful not to brown too much. Stir in tomatoes, tomato sauce, and remaining parsley.
- Remove meatloaf from oven and skim excess fat from drippings. Pour sauce over loaf. Bake 15 minutes longer.
- Let set a few minutes before slicing.
- Especially yummy alongside mashed potatoes, all covered with the vegetable sauce.
