Stuffed Pepper Soup W Orzo

- 1 c. chopped onion shopping list
- 3 cloves garlic minced shopping list
- 1 lb. ground pork shopping list
- 1 t. Italian seasoning shopping list
- 1/2 t. dried basil shopping list
- 2 c. diced pepper (I used both green and red) shopping list
- 1 (14.5 ounce) can diced tomato (I used no-salt added) shopping list
- 2 (8 ounce) cans tomato sauce shopping list
- 4 c. beef broth (I used low sodium) shopping list
- 1 tsp. beef Better than Bouillon (instead of adding salt) shopping list
- a few cranks of cracked black pepper shopping list
- 3/4 c. orzo shopping list
- Parmesan cheese optional shopping list
- Fresh chopped parsley optional shopping list
How to make it
- 1.Chop onion and garlic in food processor to equal about 1 cup of mix.
- 2. In medium stock pot add 2 T. Olive oil, ground pork, and chopped onion/garlic mix. Sautee till pork is no longer pink and onion/garlic mix is soft.
- 3. Add herbs and sautee another minute to release fragrance.
- 4. Add chopped peppers and sautee another minute or so to sweat.
- 5. Add tomato products, broth, bouillon, and fresh cracked black pepper.
- Note ** I like to zing diced tomatoes up with an immersion blender
- 6. Cover and bring to boil. Reduce heat to simmer.
- 7. Add orzo and cook till pasta is tender.
- To serve sprinkle with parmesan cheese to taste and garnish with fresh chopped parsley.
