Low Gi Rice Pulao (using Aishwarya Low Gi Rice)

- 1 cup Aishwarya Low GI Rice shopping list
- 2 cups water shopping list
- 1 cup mixed vegetables (carrot, peas, beans) shopping list
- 1 onion, sliced shopping list
- 1 green chilli shopping list
- Whole spices: bay leaf, clove, star anise shopping list
- 1 tsp ginger-garlic paste shopping list
- 1 tbsp ghee or cold-pressed oil shopping list
- Salt to taste shopping list
- Fresh mint or coriander shopping list
How to make it
- Rinse Aishwarya Low GI Rice and soak for 15–20 minutes for softer, fluffier grains.
- Heat ghee in a pan, add whole spices, and sauté until aromatic.
- Add onions and green chilli; cook until golden.
- Stir in ginger-garlic paste and vegetables.
- Add soaked rice, water, and salt. Cook on low flame until rice turns fluffy and separate.
- Garnish with fresh mint or coriander and serve warm.
