Mimi’s Scotch Pecan Oatmeal Cookies

- 1 1/4 cups all purpose flour shopping list
- 1 teaspoon baking soda shopping list
- 1/2 teaspoon cinnamon shopping list
- 1/2 teaspoon salt shopping list
- 1 cup softened salted butter (2 sticks) shopping list
- 3/4 golden brown sugar packed shopping list
- 3/4 granulated sugar shopping list
- 2 eggs shopping list
- 1 teaspoon vanilla shopping list
- 3 cups oatmeal shopping list
- 3/4 cup broken pieces pecans shopping list
- 2 cups butterscotch pieces shopping list
How to make it
- Preheat oven 375 degrees. In a separate bowl. Mix dry ingredients (flour, salt, soda and cinnamon) and set aside. In a mixing bowl, blend together, sugars, eggs, vanilla until smooth. Gradually add flour mixture until mixed. Add oatmeal, nuts, and butterscotch pieces and hand mix. Drop onto cookie sheet space apart. Bake 9-11 minutes until golden brown. Allow to cool before removal. Be careful, they will be delicate until cooled. Enjoy!
