Salsa Recipe
This is a great recipe. Can be served with tortilla chips, wrapped up in a tortilla shell with refried beans or 3 Tbsp. added to your scrambled eggs.

Ingredients
  • 4 cups ripe chopped tomatoes:scalded, peeled ; stems and cores removed
  • 1-4oz. can chopped chillies
  • 2 large white onions, chopped
  • 1 yellow pepper, seeded and chopped
  • 1 red pepper, seeded and chopped
  • 6-10 whole jalapeno peppers, chopped
  • 1- 51/2 oz. can tomato paste
  • 3/4 cup white vinegar
  • 1/4 cup brown sugar
  • 1 Tbsp. course pickling salt
  • 2-3 tsp. paprika
  • 4-6 minced garlic cloves

Directions
  1. Combine all ingredients in a large pot. Bring to a boil over medium heat and leave uncovered. Stir occasionally.
  2. Boil gently for 60 minutes, stirring occasionally; until thickened to desired consistency.
  3. * Close to the end of cooking; taste to see if you would like to add more jalapeno peppers or garlic. If you should desire a richer taste; please do add more...personalize this recipe and make it yours.
  4. Fill hot, sterilized jars to within 1/2 inch of top of jar. Place sterilized metal lids on jars and screw metal bands on securely.
  5. * For added assurance against spoilage; use a boiling water bath for 10 minutes.
