Ingredients

Albacore or Yellow tail, Sage, Thyme.

Directions

Season fish with sage and thyme on both sides and let stand 30 minutes

Put olive oil in pan

Preheat pan to medium hot

Fry fish about 3 to 4 minutes per side depending on thickness

Cook to medium rare so that fish is not over done

Serve and enjoy
