How to make it

  • boil potatoes until tender. I cook for about 45 min, just covered by water.
  • Cool completely
  • Peel if desired, or just cut into small cubes
  • Place potatoes in large bowl
  • Add a few splashes of red wine vinegar.
  • Add 2 T. minced onion, more to taste if you are using a sweet onion, like Vidalia.
  • Mix in equal amounts of miracle whip and mayo until desired consistencey, I use two heaping tablespoonsful of each.
  • Sprinkle in some dried parsley and mix in the hard boiled eggs, diced.
  • Best if refrigerated a few hours or overnight to allow the flavors to "blend".
