Pear Cranberry Apple Streusel Loaf Recipe
This loaf is loaded with fruit! Looks pretty on a serving plate and is moist, crunchy, and spicy at the same time. It disappears pretty fast around here!

Ingredients
  • 3/4 c brown sugar
  • 1/2 c butter, softened
  • 2 eggs
  • 1/3 c peeled mashed ripe pears (I use Bartlett)
  • 2 tbsp fresh lemon juice
  • 2 tsp vanilla
  • 2 c flour
  • 1 1/2 tsp ground ginger
  • 1 tbsp finely chopped crystallized ginger
  • 1 tsp allspice
  • 2 tsp cinnamon
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup coarsely chopped pears (peeled)
  • 1 c baking apples peeled and chopped
  • 1 c fresh or frozen cranberries
  • 1/2 c chopped walnuts (optional)
  • Streusel:
  • 1/2 c packed brown sugar
  • 3 tbsp flour
  • 2 tsp cinnamon
  • 3 tbsp melted butter

Directions
  1. In large bowl combine brown sugar, butter, eggs, mashed bananas, lemon juice, and vanilla. Beat until smooth.
  2. In another bowl combine flour, both gingers, allspice, baking soda, cinnamon, and salt. Mix into wet ingredients.
  3. Fold in rest of fruit and nuts.
  4. Pour into 2 greased loaf pans.
  5. Combine streusel topping.
  6. Sprinkle over loaves and bake at 350 for about an hour.
