Pear Cranberry Apple Streusel Loaf

- 3/4 c brown sugar shopping list
- 1/2 c butter, softened shopping list
- 2 eggs shopping list
- 1/3 c peeled mashed ripe pears (I use Bartlett) shopping list
- 2 tbsp fresh lemon juice shopping list
- 2 tsp vanilla shopping list
- 2 c flour shopping list
- 1 1/2 tsp ground ginger shopping list
- 1 tbsp finely chopped crystallized ginger shopping list
- 1 tsp allspice shopping list
- 2 tsp cinnamon shopping list
- 1 tsp baking soda shopping list
- 1 tsp salt shopping list
- 1 cup coarsely chopped pears (peeled) shopping list
- 1 c baking apples peeled and chopped shopping list
- 1 c fresh or frozen cranberries shopping list
- 1/2 c chopped walnuts (optional) shopping list
- Streusel: shopping list
- 1/2 c packed brown sugar shopping list
- 3 tbsp flour shopping list
- 2 tsp cinnamon shopping list
- 3 tbsp melted butter shopping list
How to make it
- In large bowl combine brown sugar, butter, eggs, mashed bananas, lemon juice, and vanilla. Beat until smooth.
- In another bowl combine flour, both gingers, allspice, baking soda, cinnamon, and salt. Mix into wet ingredients.
- Fold in rest of fruit and nuts.
- Pour into 2 greased loaf pans.
- Combine streusel topping.
- Sprinkle over loaves and bake at 350 for about an hour.
