Ingredients
  • 1 jar pasta sauce
  • 1 (4 oz.) can sliced mushrooms (or more if you really like mushrooms)
  • 1 medium onion, diced
  • 1 -2 medium zuchinni, halved and sliced
  • 1 pound ground beef (or turkey)
  • 1 pound Italian sausage (mild or hot)
  • Red pepper flakes, to taste
  • Italian seasoning
  • Salt, pepper and garlic powder
  • 1 pound package pasta such as ziti or rigatoni
  • Mozzarella cheese
  • Cottage or Ricotta cheese
  • Parmesan cheese

Directions
  1. Preheat oven to 350 degrees.
  2. In a large skillet, brown the ground beef and Italian sausage, breaking up the meat into small pieces. Season with Italian seasoning, pepper, garlic powder and a small amount of salt. When done, drain off the fat and return meat to the skillet.
  3. Add the onion, zuchinni and mushrooms and cook until soft. Season with red pepper flakes.
  4. Meanwhile, cook pasta according to package directions; drain.
  5. When vegetables are soft, add the pasta and pasta sauce; mix to combine.
  6. Place about half of the pasta mixture in a 9 X 13-inch pan. Layer the cottage cheese and Parmesan cheese, and then cover with the remaining pasta mixture.
  7. Top with mozzarella cheese and more Parmesan, if desired.
  8. Pop in the oven for about 30 minutes, or until the cheese is melted and the dish is heated through.
  9. Let rest about 10 minutes before serving.
  10. Round out the meal with a green salad.
