I have had this recipe for over 30 years. One of my all-time favorites because, besides tasting so good, it is great for family or company. Easy to serve for a large group because you can cut into squares. Enjoy!

Ingredients
  • Chicken Loaf
  • 3 c. cooked chicken, cubed
  • 2 c. bread crumbs
  • 1 c. cooked rice
  • 1½ tsp. salt
  • 1/3 c. chopped pimiento
  • 3 c. chicken broth
  • 4 eggs, well beaten
  • 1 c. celery, diced
  • 1 sm. onion, grated
  • 1 c. cashews
  • Sliced almonds for garnish
  • Mushroom Sauce
  • 3 Tbsp. butter
  • 3 Tbsp. flour
  • 2 Tbsp. grated onion
  • 1½ c. chicken broth
  • ½ lb. fresh mushrooms
  • Salt and pepper, to taste
  • Quick & Easy Mushroom Sauce
  • 1 can mushroom soup
  • ½ c. milk

Directions
  1. Chicken Loaf
  2. Combine all ingredients except almonds in large bowl and place in a 9x13-inch pan. Bake for 45 minutes at 350. Cut into squares and top with either the fancy or easy mushroom sauce. Garnish with sliced almonds, if desired.
  3. Mushroom Sauce
  4. Cook butter, flour and onion until lightly browned. Stir in broth and mushrooms. Cook, stirring, until slightly thickened. Season with salt & pepper. Top each serving of chicken loaf with sauce.
  5. Quick & Easy Mushroom Sauce
  6. Combine soup and milk, heating thoroughly. Top each serving of chicken loaf with sauce.
