- chicken Loaf
- 3 c. cooked chicken, cubed shopping list
- 2 c. bread crumbs shopping list
- 1 c. cooked rice shopping list
- 1½ tsp. salt shopping list
- 1/3 c. chopped pimiento shopping list
- 3 c. chicken broth shopping list
- 4 eggs, well beaten shopping list
- 1 c. celery, diced shopping list
- 1 sm. onion, grated shopping list
- 1 c. cashews shopping list
- sliced almonds for garnish shopping list
- Mushroom Sauce
- 3 Tbsp. butter shopping list
- 3 Tbsp. flour shopping list
- 2 Tbsp. grated onion shopping list
- 1½ c. chicken broth shopping list
- ½ lb. fresh mushrooms shopping list
- salt and pepper, to taste shopping list
- Quick & Easy Mushroom Sauce
- 1 can mushroom soup shopping list
- ½ c. milk shopping list
How to make it
- Chicken Loaf
- Combine all ingredients except almonds in large bowl and place in a 9x13-inch pan. Bake for 45 minutes at 350. Cut into squares and top with either the fancy or easy mushroom sauce. Garnish with sliced almonds, if desired.
- Mushroom Sauce
- Cook butter, flour and onion until lightly browned. Stir in broth and mushrooms. Cook, stirring, until slightly thickened. Season with salt & pepper. Top each serving of chicken loaf with sauce.
- Quick & Easy Mushroom Sauce
- Combine soup and milk, heating thoroughly. Top each serving of chicken loaf with sauce.
