This is a yummy, healthy chili. It goes great as a Frito pie base just add fresh chopped onion, Fritos and shredded cheddar to make a delicious football-watching meal!

Ingredients
  • 1 onion, diced
  • 1/2 green bell pepper, diced
  • 1 cup diced mushroom (optional)
  • 2 cloves garlic
  • Minced serrano or chipotle pepper (optional for spicy)
  • 1 lb ground turkey
  • 1 can black beans, undrained
  • 1 (14.5 oz) can crushed tomatoes
  • 1.5 teaspoons chili powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 tablespoon corn starch
  • salt and pepper to taste

Directions
  1. In a large heavy pot over medium heat, cook onion, peppers, mushrooms, garlic and pepper until onions are translucent.
  2. Introduce turkey and cook, stirring, until meat is brown.
  3. Stir in beans, tomatoes, chili powder, oregano, and basil.
  4. Reduce heat to low, cover and simmer 45 minutes.
  5. Mix corn starch with a bit of water to make a paste. Add it to the chili and stir.
  6. Simmer for 10 to 15 more minutes until flavors are well blended.
  7. Salt and pepper to taste.
