Applesauce Bran Loaf Recipe
Finally! I found a delicious healthy recipe using whole wheat flour and bran! This is delicious!!

Ingredients
  • 1 cup Whole Wheat Flour
  • 3/4 cup Natural Wheat Bran
  • 1/2 cup brown sugar (not packed)
  • 2 tsp Cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 egg, lightly beaten
  • 1 cup Applesauce-Unsweetened
  • 1/2 cup plan yogurt
  • 2 tbsp safflower oil

Directions
  1. Preheat oven to 375F (190C). Grease 8 by 4 inch loaf pan
  2. In large bowl, whisk together flour, bran, brown sugar, cinnamon, baking powder, and baking soda. In another bowl and using a wooden spoon, stir together egg, applesauce, yogurt and oil; stir into bran misture just until moistened. Do not overmix. Pour batter into prepared loaf pan.
  3. Bake in centre of oven for 35 to 40 minutes or until tester inserted in centre comes out clean. Cool in pan on wire rack for 10 minutes. Remove from pan to cool fully.
  4. Per serving:190 calories;5 g fat; 210 mg sodium;33 g carbohydrates;5g fibre;5g protein. SOURCE OF FIBER

These were good, I had to use up some old apples so I cooked them down to sub. the apple sauce. Next time I might add some more spices, maybe nutmeg, possibly ginger. If you wanted to cut down on sugar a little it would be doable because these are sweet, but I like them that way :)
