Finnish Pancakes

This is an oven pancake that puffs up. Can be filled with fruit or eaten as is!
Ingredients
- 2 eggs shopping list
- 1/2 cup milk shopping list
- 1/8 tsp salt shopping list
- 1/2 cup flour shopping list
- 1 Tablespoon margarine or butter shopping list
How to make it
- Preheat the oven to 400*
- Put the margarine/butter in a pie pan, put in the oven and melt the butter.
- while the butter is melting, Whisk together the eggs and milk. add the flour and salt.
- Pour over the melted butter in the pie pan. Bake for 30 min. our until puffed and golden.

I've used a similar recipe from King Arthur Flour's Baking Sheet letter. This sounds easier! I served peach sections, blueberries and a dusting of powdered sugar over it. Yummmmmmy!!!
