Hot Tamale Pie

- 1/2 c cornmeal shopping list
- 1/2 c water shopping list
- 1/4 tsp salt shopping list
- 1/8 tsp cayenne pepper shopping list
- 1 1/3 c water shopping list
- 1 lb ground beef shopping list
- 1 large onion, chopped shopping list
- 1 medium red pepper, chopped shopping list
- 3 cloves garlic (less if you prefer), minced shopping list
- 1 can red kidney beans (15 1/2 oz), drained shopping list
- 1 can enchilada sauce (10oz) shopping list
- 1 can dice green chiles, undrained shopping list
- 1/4 c pitted, chopped, black olives shopping list
- 3 tsp chili powder shopping list
- 3/4 c shredded cheddar or tex-mex cheese shopping list
How to make it
- In a small bowl combine the cornmeal, 1/2 c water, salt, and cayenne.
- In a medium saucepan, bring the 1 1/3 c water to a boil.
- Add the cornmeal mixture to the boiling water carefully, stirring constantly to avoid lumps.
- Lower the heat and cook until really thick, about 15-20 minutes.
- Meanwhile, preheat the oven to 350 degrees. In a large skillet cook the ground beef, onions,red pepper, and garlic untilmeat is browned.
- Drain off the fat then stir in the kidney beans, enchilada sauce, chile peppers, olives, and chili powder. Bring to a boil.
- Spread the hot cornmeal mixture into a greased 8x8 baking dish then spread the meat mixture over top of that.
- Cover with foil and bake for 20 minutes or until it's all heated through.
- Remove the foil and sprinkle on the shredded cheese then return to the oven and bake, uncovered, for another 5 minutes or until the cheese is melted. Yum!
