Hot Tamale Pie Recipe
This is a great dish for rushed nights--easily doubled or tripled. My family loves it!

Ingredients
  • 1/2 c cornmeal
  • 1/2 c water
  • 1/4 tsp salt
  • 1/8 tsp cayenne pepper
  • 1 1/3 c water
  • 1 lb ground beef
  • 1 large onion, chopped
  • 1 medium red pepper, chopped
  • 3 cloves garlic (less if you prefer), minced
  • 1 can red kidney beans (15 1/2 oz), drained
  • 1 can enchilada sauce (10oz)
  • 1 can dice green chiles, undrained
  • 1/4 c pitted, chopped, black olives
  • 3 tsp chili powder
  • 3/4 c shredded cheddar or tex-mex cheese

Directions
  1. In a small bowl combine the cornmeal, 1/2 c water, salt, and cayenne.
  2. In a medium saucepan, bring the 1 1/3 c water to a boil.
  3. Add the cornmeal mixture to the boiling water carefully, stirring constantly to avoid lumps.
  4. Lower the heat and cook until really thick, about 15-20 minutes.
  5. Meanwhile, preheat the oven to 350 degrees. In a large skillet cook the ground beef, onions,red pepper, and garlic untilmeat is browned.
  6. Drain off the fat then stir in the kidney beans, enchilada sauce, chile peppers, olives, and chili powder. Bring to a boil.
  7. Spread the hot cornmeal mixture into a greased 8x8 baking dish then spread the meat mixture over top of that.
  8. Cover with foil and bake for 20 minutes or until it's all heated through.
  9. Remove the foil and sprinkle on the shredded cheese then return to the oven and bake, uncovered, for another 5 minutes or until the cheese is melted. Yum!
