How to make it

  • In a small bowl combine the cornmeal, 1/2 c water, salt, and cayenne.
  • In a medium saucepan, bring the 1 1/3 c water to a boil.
  • Add the cornmeal mixture to the boiling water carefully, stirring constantly to avoid lumps.
  • Lower the heat and cook until really thick, about 15-20 minutes.
  • Meanwhile, preheat the oven to 350 degrees. In a large skillet cook the ground beef, onions,red pepper, and garlic untilmeat is browned.
  • Drain off the fat then stir in the kidney beans, enchilada sauce, chile peppers, olives, and chili powder. Bring to a boil.
  • Spread the hot cornmeal mixture into a greased 8x8 baking dish then spread the meat mixture over top of that.
  • Cover with foil and bake for 20 minutes or until it's all heated through.
  • Remove the foil and sprinkle on the shredded cheese then return to the oven and bake, uncovered, for another 5 minutes or until the cheese is melted. Yum!
