Almond Pie Recipe
This is a great pie for ending a heavy meal. Just sweet enough.

Ingredients
  • 1 9" unbaked pastry shell
  • 1/2 c butter
  • 3 eggs
  • 1 c sugar
  • 1/4 c honey
  • 3/4 c light corn syrup
  • 1 tsp vanilla
  • 1/4 tsp almond extract
  • 1/8 tsp salt
  • 1 c toasted chopped almonds
  • whipped cream for topping
  • 1/3 c toasted slivered almonds for garnish

Directions
  1. In a saucepan melt the butter over low heat until browned. This will take about 10 minutes. Cool.
  2. In a mixing bowl beat the eggs then add the sugar, corn syrup, honey, vanill and almond extracts, salt, and melted butter. Stir well to combine.
  3. Add the almonds in and pour into the pastry shell.
  4. Bake at 425 degrees for about 10 minutes then reduce heat to 325 and bake another 40 minutes or until knife inserted in the middle comes out clean.
  5. Cool then garnish with whipped cream and extra toasted almonds.
