Ingredients

new potatoes boiled and sliced 8oz

sliced fried onions6oz

bacon strips or lardons6oz

mushrooms sliced 60z

6 eggs whisked

salt and black pepper

Directions

fry the bacon and onions in good none stick pan till golden

add the mushrooms cook for 2 mins

add the cooked sliced potatoes cook till colored and all the flavours have mingled

add salt and black pepper to taste

remove to a dish to keep warm in oven,wipe the pan,add a little oil,heat and add the whisked egg,stir gently till set,add the filling and roll up omelette style.

serve and eat with crusty buttered bread.me and my wife love this on a sunday morning.enjoy
