Saffron Fish

How to make it
- melt 1/4lb (1 stick) of unsalted butter in hot pan
- add 3 tbsp chopped garlic
- add 10-20 threads of saffron
- add 3 tbsp chopped shallots
- add 1/2 cup chopped onions
- saute all till they are translucent
- add 1 cup cherry tomatos
- add pinch of salt to bring out water in tomatos
- add 1/2 bottle of white wine
- add 1 cup clam juice
- boil on high for 10 minutes to remove wine's alcohol and clam juice fishiness
- in another pan fry fish filet on high, 2 minutes on each side, slightly burning/searing each side
- put finished fish in a larg deep plate
- add 1 cup chopped parsley to sauce
- mix briefly, remove from heat, and pour sauce over fish
- add crushed fresh black pepper
- eat w/ crusty toasted french bread
