Ingredients
  • garlic
  • dry white wine
  • saffron
  • parsley
  • cherry tomojatoes
  • onions
  • shallots
  • whitefish
  • clam juice
  • butter
  • salt
  • fresh pepper

Directions
  1. melt 1/4lb (1 stick) of unsalted butter in hot pan
  2. add 3 tbsp chopped garlic
  3. add 10-20 threads of saffron
  4. add 3 tbsp chopped shallots
  5. add 1/2 cup chopped onions
  6. saute all till they are translucent
  7. add 1 cup cherry tomatos
  8. add pinch of salt to bring out water in tomatos
  9. add 1/2 bottle of white wine
  10. add 1 cup clam juice
  11. boil on high for 10 minutes to remove wine's alcohol and clam juice fishiness
  12. in another pan fry fish filet on high, 2 minutes on each side, slightly burning/searing each side
  13. put finished fish in a larg deep plate
  14. add 1 cup chopped parsley to sauce
  15. mix briefly, remove from heat, and pour sauce over fish
  16. add crushed fresh black pepper
  17. eat w/ crusty toasted french bread
