Eggplant Parmesan

- 2 medium fried eggplant shopping list
- 2 cups tomato sauce shopping list
- 3 tablespoons chopped fresh basil shopping list
- salt and freshly ground black pepper to taste shopping list
- 1 1/2 lbs. mozzarela cheese, sliced 1/4 inch thick shopping list
- 8 tablespoons freshly grated romano cheese shopping list
- 1 tablespoon olive oil shopping list
How to make it
- Preheat oven to 375F
- Spread 1/2 of the tomato sauce in the bottom of a 1 1/2 inch casserola dish and sprinkle with 1/3 of the basil.
- Layer half the eggplant in theh dish. Sprinkle lightly with salt and pepper.
- Cover the eggplant with a layer tomato sauce and sprinkle with another 1/3 of the basil.
- Add a layer of mozzarela cheese and sprinkle with 2 tablespoons of romano cheese.
- Add the remaining eggplant sprinkled with salt and pepper, tomato sauce, and cheeses.
- Top with olive oil and bake in the oven for 15 minutes or until golden brown. Serve immediately.
