How to make it

  • Preheat oven to 375F
  • Spread 1/2 of the tomato sauce in the bottom of a 1 1/2 inch casserola dish and sprinkle with 1/3 of the basil.
  • Layer half the eggplant in theh dish. Sprinkle lightly with salt and pepper.
  • Cover the eggplant with a layer tomato sauce and sprinkle with another 1/3 of the basil.
  • Add a layer of mozzarela cheese and sprinkle with 2 tablespoons of romano cheese.
  • Add the remaining eggplant sprinkled with salt and pepper, tomato sauce, and cheeses.
  • Top with olive oil and bake in the oven for 15 minutes or until golden brown. Serve immediately.
