Eggplant Parmesan Recipe

Ingredients
  • 2 medium fried eggplant
  • 2 cups tomato sauce
  • 3 tablespoons chopped fresh basil
  • salt and freshly ground black pepper to taste
  • 1 1/2 lbs. mozzarela cheese, sliced 1/4 inch thick
  • 8 tablespoons freshly grated romano cheese
  • 1 tablespoon olive oil

Directions
  1. Preheat oven to 375F
  2. Spread 1/2 of the tomato sauce in the bottom of a 1 1/2 inch casserola dish and sprinkle with 1/3 of the basil.
  3. Layer half the eggplant in theh dish. Sprinkle lightly with salt and pepper.
  4. Cover the eggplant with a layer tomato sauce and sprinkle with another 1/3 of the basil.
  5. Add a layer of mozzarela cheese and sprinkle with 2 tablespoons of romano cheese.
  6. Add the remaining eggplant sprinkled with salt and pepper, tomato sauce, and cheeses.
  7. Top with olive oil and bake in the oven for 15 minutes or until golden brown. Serve immediately.
