Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup vegetable or canola oil
  • 1/2 cup brown sugar
  • 2 eggs (beaten)
  • 5 large or 6-7 small overripe bananas mashed to a pulp (about 3 cups)
  • Semi sweet chocolate chunks cut up into shards or chocolate chips

Directions
  1. 1. Preheat oven to 350. Lightly grease a 9x5 loaf pan.
  2. 2. In a large bowl combine the dry ingredients.
  3. 3. Add sugar and all wet ingredients (mashed bananas, oil, beaten eggs). Stir well.
  4. 4. Add as much chocolate chunks/chips to the mix as desired. Pour into pan and stud the top with more chocolate (if desired).
  5. Bake 60-70 minutes, until toothpick comes out clean from middle.
  6. 5. Let sit in pan for 10 minutes on top of stove before unmolding.
