Adobo Ni Edith Recipe
A version of adobo the way my late mother used to make. This is one of my favorite dishes.

Ingredients
  • 1/2 kilo pork pang-adobo
  • 6 cloves of garlic, minced
  • 2 big potatoes, sliced into wedges
  • 1 cup vinegar
  • 2 cups soy sauce
  • 1 cup water
  • 1 TSP sesame oil
  • 1 tsp sugar
  • pepper and salt to taste

Directions
  1. Fry the sliced potato wedges until soft and golden brown. drain and set aside.
  2. Mix all the remaining ingredients in a pot, and let it boil until pork is soft and tender.
  3. when pork is tender, let the dish simmer another 5 minutes or until the liquid is just enough to cover half the meat.
  4. Add in the fried potato wedges. Serve hot with steamed or fried rice.
