Chili Sweet Potatoes

This dish is a super easy alternative to chili or spaghetti - use either your Chili or Italian seasonings - whatever you are in the mood for - it's delicious!
Ingredients
- 3 Large sweet potatoes or yams, peeled & cubed shopping list
- 1-1/2 lb ground beef shopping list
- 1 can kidney beans (or any other bean of your choice) shopping list
- mushrooms, sliced shopping list
- 1 can spaghetti sauce or recipe starter, i.e. Hunts Accent tomatoes, or mix shopping list
- 1 tsp salt (optional) shopping list
- 1 tsp pepper shopping list
- 1-2 garlic cloves shopping list
- 1-2 Tbsp chili powder or italian seasonings (1/2 tsp basil / 1/2 tsp oregano) shopping list
- Dash of Tabasco sauce shopping list
- 1 Tbsp olive oil shopping list
- 1/2 cup grated cheddar (optional) shopping list
How to make it
- Preheat the oven to 450 degrees
- Place potatoes, oil, salt & pepper in tin foil pouch or roasting pan, and cook until tender
- Meanwhile:
- Brown the ground beef
- Add garlic and mushrooms, cook until tender
- Add remaining ingredients, and simmer until sweet potatoes are done
- Serve sauce mixture over sweet potatoes, and sprinkle cheese to melt on top
