How to make it

  • Chicken Cutlets:
  • Place cheese in breading dish
  • Add salt and pepper to bread crumbs and put in separate breading dish
  • Lightly whisk eggs and place in bowl
  • Rince chicken under water
  • Place in the cheese
  • Dip in the egg
  • Then place in the breadcrumbs
  • Once all are breaded cook in frying pan with either olive oil or butter about 7 min on each side
  • Once they are done place on a dish with a paper towel to let some of the olive oil or butter to absorb on to
  • Slice the tomato and mozzarella
  • Place chicken (or eggplant*) on the dish, place the basil on top of warm chicken or eggplant, then the slice of tomato, then the slice of mozzarella drizzle with extravirgin olive oil and balsamic vinegar. Garnish with basil
  • To make eggplant as another option:
  • Make the fried eggplant the same way as the chicken is listed above, omitting rincing underwater and instead of dipping in cheese first add 1/2 cup of cheese to the breadcrumbs.
