Quick Mexican Casserole Recipe

Ingredients

1-1/2 lbs ground beef

1 can rotel

1/4 teaspoon salt

1 can spanish rice

Topping: 1 small bag corn chips

1-1/2 cups shredded cheddar cheese

Directions

Saute ground beef

Add rotel and salt

Simmer 20 minutes

Pour into buttered casserole dish

Layer with beans and rice

Bake 25 minutes at 350

Add topping to casserole and bake 10-15 minutes more

Sorry bout that, I totally forgot to put that in the recipe. I use ranch style beans. I believe it's two cans one can per layer.
