Ingredients
  • 1 box of 'Mexican Style' Rice-a-Roni (a 6.4 oz box)
  • 2 chicken breasts, cut into 1 inch peices
  • 2 1/4 cups of water
  • half a can of 6 oz. large olives
  • half an 8 oz. container of mushrooms, halved or quartered.
  • half a small yellow onion, diced
  • 2 green onions chopped
  • 3 tablespoons of butter, margarine, or vegetable oil (for chicken and rice)
  • salt and pepper to taste
  • Shredded Cheese and Flour tortillas are optional, but not neccesary.

Directions
  1. 1. In a medium skillet to or pot heat 1 Tbs butter or margarine on medium heat till melted and add Chicken and Salt and Pepper.
  2. 2. Stir untill browned (doesn't have to bee cooked all the way through, just cooked on the outside. Set chicken aside.
  3. 3. In the same pot heat the other 2 Tbs of Butter and add Rice mix as suggested on the box directions.
  4. 4. Saute rice mix over medium until the vermicelli pieces are golden brown.
  5. 5. Add Onion and Green Onion and stir one more minute.
  6. 6. Add the Water (2 1/4 cups) and the seasoning packet that comes with the rice.
  7. 7. Add Mushrooms, Olives, and Browned chicken.
  8. 8. Heat till water is boiling and cover the pot ot skillet.
  9. 9. Reduce heat to Medium-Low or Low. Cook 15-20 minutes or until rice is tender.
  10. 10. Let sit 3 minutes
  11. 11. Enjoy covered in cheese or with flour tortillas is you want to.

So Ive noticed some errors and have tried editing the recipe, but for some reason it won't let me, so just to clear up some of the obvious numbers:

Number of Servings: 3-4
Cook Time: 20-25 minutes
Sorry for the typos, I'll blame it on typing while ravenous.


Dont be upset about the mistakes
any one will make mistakes while typing arecipe
but all what we care about is the ricpe it self and it looks delicous
