This is my mom's favorite dessert to make for family gatherings. It reminds me of a Toasted Almond ice cream bar.

Ingredients
  • 1/2 gal. vanilla ice cream, softened
  • 2 1/2 c. Rice Chex or Corn Chex cereal
  • 1/2 c. melted butter
  • 3/4 c. slivered almonds
  • 1 c. shredded coconut
  • 1 1/2 c. brown sugar

Directions
  1. Preheat oven to 350
  2. Crush Corn/Rice Chex on a cookie sheet with a rolling pin
  3. Place cereal in a large mixing bowl with almonds and butter and mix well
  4. Spread mixture onto a cookie sheet and place in oven, stirring occasionally until golden brown
  5. In large mixing bowl, combine coconut and brown sugar
  6. Add cereal mixture to mixing bowl and mix well
  7. Line a 13x9 pan with 1/2 of mixture
  8. Spoon ice cream on top of mixture and smooth evenly
  9. Place remaining mixture on top of ice cream
  10. Freeze for 2-3 hours
  11. Remove from freezer about 20 minutes before cutting
