How to make it

  • Preheat oven to 350
  • Crush Corn/Rice Chex on a cookie sheet with a rolling pin
  • Place cereal in a large mixing bowl with almonds and butter and mix well
  • Spread mixture onto a cookie sheet and place in oven, stirring occasionally until golden brown
  • In large mixing bowl, combine coconut and brown sugar
  • Add cereal mixture to mixing bowl and mix well
  • Line a 13x9 pan with 1/2 of mixture
  • Spoon ice cream on top of mixture and smooth evenly
  • Place remaining mixture on top of ice cream
  • Freeze for 2-3 hours
  • Remove from freezer about 20 minutes before cutting
