For more of my recipes visit my blog at whatscooking.us This dish was surprisingly good. The granola gives the chicken a crunchy and healthy taste. When I first prepared it I wasn't sure I was going to like but the result was a delicious dinner.

Ingredients
  • 2 Boneless and skinless chicken breasts cut in half
  • 2 ½ Cups skim milk
  • 1 Egg
  • 2 Cups plain granola
  • 1 Pinch ground clove
  • Italian seasoning
  • Salt
  • Ground black pepper

Directions
  1. With a whisk mix the milk, egg, salt, ground pepper, Italian seasoning and ground clove until all the ingredients are incorporated.
  2. Marinate the chicken breasts in that mix for at least 3 hours or overnight for best results.
  3. Preheat oven at 300° F.
  4. Cover chicken with granola to form a crust around it. The best way to do this is to put the granola on a flat container and the chicken breasts on top pressing them lightly against the granola and turning them over to cover both sides.
  5. Lay the chicken breasts on a baking sheet and bake them for 20 to 25 minutes. The cooking time will depend on the thickness of the chicken so make sure to keep an eye on them to avoid overcooking them.
